Lemon Verbena Collins

The Verbena soda is the second flavor we came up with. Just after the aperitivo. The idea was to create something completely opposite in terms of flavors. Something super bright, green, sour. A soda in the style of a Tom Collins, a classic cocktail where the herbal notes of gin married with lemon, sugar and soda create a highly chuggable adult lemonade. We knew we needed to find some kind of herbal component. We tested everything that reminds us of lemon:  lemon verbena, lemon balm, lemongrass, lemon thyme, cardamom, lime leaf and more. Lemon Verbena was so fragrant, so reminiscent of a true lemon aroma. The infusion was bright, refreshing, almost minty and floral. We combined that with lemon zests, fresh lemon juice and our delicate bubbles. I think we nailed that chuggable adult lemonade. And best part, you won’t even miss the gin.
